Well I’m back again 🙂 And, happy Spring! The Spring weather is feeling so good, fresh air, warm sunshine and refreshing breezes.
I had hoped to be back sooner, but, wow life is busy with a baby. But I’m enjoying every moment because I know this time goes so fast. It’s hard to believe he is already 6 months and crawling! And, I must say I am feeling great. I’m still amazed I lost all my pregnancy weight with gentle Yoga, the Fresh Fruit Cleanse and healthy eating. Losing weight, being healthy and staying shape doesn’t have to be hard! It all comes down to what and how much you eat. So listen to your body and it will always tell you what’s best for you. Practices like Yoga help to get us in touch with the intelligence of our own bodies so that we can feel and hear what they are guiding us to do.
So, a couple of things…
First, I’m amazed I haven’t written about quinoa on the Fresh Fruit Cleanse blog yet. It is one of my favorite grains. How about you? I feel SO good when I eat quinoa because it’s packed with protein, fiber and iron. In fact, it’s the most protein rich food we can eat, containing all nine essential amino acids. That’s awesome! And, the fiber in quinoa will keep you energized and lean!
As many of you know, the Fresh Fruit Cleanse book has several recipes in the Vegan Recipes for Life section that are made with quinoa. They even make organic baby food with quinoa in it because it’s that good for you and your baby. Just today when I was eating quinoa on a kale and spinach salad, I found myself thinking I’ve got to start eating quinoa for breakfast ,too. What a great way to start the day filling up with heart healthy protein. You can read more about this ‘Supergrain of the Future’ here.
And, I intend to do just that with the recipes from the Fresh Fruit Cleanse book.
One of the recipes is made with a raw cashew cream sauce that’s called Sooo Delicious Cashew Cream and, not only is it sooo delicious it’s also soooo simple to make. One of my friends who contributed several recipes to the Fresh Fruit Cleanse book gave me this recipe and I would like to share it with you here:
Sooo Delicious Cashew Cream
Makes 4 Servings
2 cups raw unsalted cashews
1 cup water
Soak the cashews in the water for 1 hour. Blend the soaked nuts and water until creamy. Serve over your favorite fruit salad. The cashew cream will keep in the refrigerator for 4 days. This can be sweetened with agave nectar or raw honey.
So, simply add some pumpkin seeds, sunflower seeds, slivered almonds and fresh berries and fruit to your quinoa and top with Sooo Delicious Cashew Cream. Out of this world delicious and nutritious.
My other favorite way to eat quinoa, as I mentioned above, is on spinach or kale salad.
Also, I’m sure most of us have heard how good kale is for us, but, it wasn’t until I saw this picture that it really hit home for me just HOW good kale is. And, just the other day I was watching Sesame Street (my new reality) and there was even a kid wearing a t-shirt that said: Eat more kale. You know when Sesame Street starts promoting it it’s time to jump on the kale wagon for sure.
Mix it into soups (I love it like that) or smoothies.
Here’s a smoothie with kale that I really like:
Kale Kiwi Detox Smoothie
1/2 cup of cucumber
2 handfuls of kale
1 medjool date
1 frozen banana
1 cup water
